Yea, huh is used by people in speech while asking a question.
And the '--' could probably be substituted with an em-dash too(—).

With "You'd rather I'd not do that, huh?", even without context is person stating semi-sarcastically that "You'd rather I'd not do that.", rather then "You'd rather I'd not do that?" which without context is ambiguous, though I'd normally assume it would be a direct question.

Sometimes, it is also used to invite agreement or comments. Like, "You want to come with me, huh?"

But in this context, it means something along the lines of "You want to mess with me, huh?", to "You don't want to mess with me".

Hm, maybe its as you say, but I thought it was still something else - argh I hate this forgetfullnes, or rather inattentiones to titles, but still so it is sometimes possible to read something twice, trice or more often and can still have fun reading it - or maybe I did already read too much so that things mix up in the memory...
