did the characters turned into "opposite-genders"? or is the book mainly about Gender bender. mind transfer dont count
Your definition of GB is different then. There, actually, are not many novels that fulfill your requirement. I could only think of Kampfer and Boku no Goshujin-sama. You're simplifying things. You can't really use this metric on every novel.
