If you were worried about that, it would be "Yoh" rather than "Yuh." Honestly speaking, I think it should remain as is. Also, I'm not sure how confusing it would be. Her name is capitalized like all names should be. "You" as a word is only capitalized if it's at the beginning of a sentence, and the following word should tell who it refers to. The translators are also maintaining titles and honorifics for a lot of it, so it'll be "Kasukabe," "You-san," and "Kasukabe You" for the most part, so I'm not sure how awkward it is reading it.
