The Katakana would be different for Stefani, as well as the officially subbed anime saying Stephanie. Just because your sisters name is Stefani, doesn't mean you can go around changing it, besides the name Stefani is usually pronounced differently to Stephanie, there are a few cases when it isn't, but it's rare

I get really annoyed seeing my sisters name mispelled with the inferior version that doesnt make sense so I'm curious if theres undeniable proof that its "Stephanie" and not "Stefani" cuz if not I'm really tempted to change it

The Katakana would be different for Stefani, as well as the officially subbed anime saying Stephanie. Just because your sisters name is Stefani, doesn't mean you can go around changing it, besides the name Stefani is usually pronounced differently to Stephanie, there are a few cases when it isn't, but it's rare.
